Curry Chicken Pasta Recipe

Wow guests with a dish that fuses elements of cuisines around the world.

  1. Put the pasta in a 2-quart glass bowl that is microwave safe. Add 2 cups of water or until the pasta is completely submerged in the liquid. If you prefer, flavour the water with seasonings or use stock or broth instead for extra flavour. Microwave the pasta uncovered at power 10 for 7-9 minutes, stirring once during the cooking time. Drain any extra liquid. Set pasta aside.
  2. Dice chicken into 1/2-in. (1-cm) pieces. Combine chicken, garlic, ginger, olive oil, curry powder & paste, green onions in a microwavable casserole dish; mix well. Microwave, covered, at power 10 for 4 minutes; stir halfway to separate chicken.
  3. Add the cream, tomatoes, green onions and red peppers to the chicken mixture and send back to the microwave for an additional 2 ½ minutes.
  4. Pour the chicken curry sauce over the cooked pasta and finish with a drizzle of yogurt and the chopped cilantro overtop.
