One of my favourite summer pass times is to BBQ! Whether it is with friends, family or just myself I always enjoy my time in front of the grill. I thought I’d take the time to share one of my favourite BBQ dishes. I hope you enjoy this recipe as much as I do!

Greek Marinated Pork Chops

  • 6 pork chops bone on – pork loin chops work great too!
  • 125ml (1/2 cup) of Extra Virgin Olive Oil
  • 60ml (1/4 cup) fresh squeezed lemon juice.
  • 2 cloves of garlic minced
  • 1tsp onion powder
  • 2tsp oregano
  • 2tsp salt
  • Fresh cracked pepper

Combine all ingredients except lemon juice in a bowl. Pour over pork and let marinate for at least 1 hour. You can let them marinate over night as well. The longer it marinates the stronger the flavor profile. Grill pork until cooked. Pork is considered cooked at 71c or 160F. After taking off the grill pour lemon juice on the pork. This brightens the flavours. Let stand 10 minutes then serve.

If you are wondering what BBQ I use to grill with it is the Charbroil Quantum Infrared BBQ model T-22G. This BBQ uses infrared heat to cook with. Infrared heat allows you to cook up to 30% faster and has the added benefit of no flare ups. This model is currently available at all London Drugs locations.
